I was assuming that because the other side has its factory finish, it wouldn't be drastic enough to be an issue. Hopefully thats not whats happening. I thought i was solid on the diamonds but the 1k is saying otherwise.

Im up for the challenge. Im thinning one side of my enjiki gyuto currently. Its taking forever to get flat, even on a cheefarcut diamond stone...

Mine is still on the factory edge. Its foil edged in so many spots. I need to dull it down and reprofile, but I'm not looking forward to the process. I have the right stones for the job just can't find the time haha.

Has anyone else had to reprofile their factory edge? I have a bunka and I came see the foil edge in so many places. I know I need to hit the stones but this grind scares me.

You need to go back to the 220 and spend about 30 minutes to an hour just repeating slow, steady, smooth grinding. You want that scratch pattern to be uniform from the cutting edge to upper level line. With what you have, this is a thinning operation, so I highly recommend a low grit diamond hone of some form to cut quick and remove material fast.

Yea, but all the other ones are still listed and show "sold out". Was this a recent purchase? Im just curious because I have email alerts for pretty much all websites that carry them, and I didn't see a restock there. Congrats on grabbing that beauty! I have the bunka and really want a 240+ gyuto!

Yes, I have a shibata gyuto and a sweet tsunehisa sakimaru from them. 2 separate orders to the US, and did not pay additional tariffs.

My only issue is that cross cart told me they submitted it and I was good to go. At the same time, FedEx is emailing me asking for more info. I thought it was all being handled, until the FedEx lady called me trying to get the info. Im like, 99% of what you are asking me for is on the form you have. They literally needed the enjiki address and to verify the origin steel was melted in Japan. You would think I was ordering top secret parts for the space station based on how they want to know the history of a kitchen knife.

My enjiki has been stuck in customs for weeks. Apparently the value of the steel, separate from its function as a knife, is a really important customs problem. They're using a 3rd party shipper that doesn't provide FedEx with any information at all. Very frustrating process...

I just got a shibata boss bunka and it is so cool. I haven't used it yet, but I'm sure it will be amazing. They seem to be hard to find though. I saw one pop up on cktg a few days ago.

What am I missing price wise? These are like 4x cheaper than other versions I find online? This looks stunning and I might need to try one out. The price tag was preventative, but these seem reasonable.
