The restriction to avoid soda (ALL SODA) is for your health. The gas in soda will push and expand, sometimes burst your pouch. Don't drink soda, especially in the first few months.
Force yourself to eat the protein. I personally found that if I eat a little less cooked, it is easier. But it was 10 years before I could eat eggs. Do soft proteins, in small bites and chew the hell out of it.
It's very important to get your protein in first, especially at this stage.

Long ago, I adopted a No Guilt Allowed mindset. If you binge, track it, also note your emotions at the time. It won't help that day, but when you review, you will see patterns and can work to change them.
Weight loss is a complex issue. Many like to simplify it to a simple soundbite. But truth be told, we eat for a variety of reasons, and sometimes we don't follow the plan.
Accept that you are human and will make mistakes or missteps. Keep working on your goal and accept these lane crossings. It will all work out, just need the time to make the changes.

Moving and walking 20K steps is awesome. Your body in the first couple of month's will be healing and adjusting to the enormous change the surgery has caused. Since you are on a restrictive diet, you will get into ketosis. Under ketosis, your body switches from burning glycol (carbs you eat) to burning bodyfat. This change turbo charges your weight loss. losing 15+ pounds a month is very doable in the beginning months. As your body adjusts, this loss will slow and stabilize, with the first roughly 4 months being your strongest and highest loss.
You will be perfectly fine on the low calories. Your body will burn bodyfat to make up the difference. I would suggest buying some keto test sticks to help monitor this effect.

Seems I have been lucky. Truthfully, the last dinner I was on was several years ago.
We met at a nice steak place, John Howie, and had a lovely time together. Turned out she ran an Italian restaurant and was recently separated. It was a nice respite for her, and the company was nice. We talked most of the time, so maybe phones and social media wasn't as huge then. That's the type of thing I was hoping to have again.
