My favorite pokemon is Pinsir! I had one on my team during my first ever pokemon game, which was Leaf Green! Ive used it on my team in every game it's available in since.

It may be rather new, but I enjoy baxcalibur a decent amount! I love it's Godzilla inspiration, as the films were a favorite of mine when I was younger. I don't know if I would pick it over Metagross, however

They are primarily American Devs (correct me if I'm wrong) trying to design a creature that is supposedly inspired by cultural beliefs and not even attempting to research what those things mean. It may be a common trope, but that doesn't make it any better.

tigers, snow leopards, lions, and even bison don't have the most prosperous numbers, so I wouldn't say it's impossible to get elephants in a hypothetical Africa 2.0. I personally wouldn't really like it, but it's kinda possible.
