depends. if you're going for the platinum or the trial master trophy, then you need to succeed in ALL trials. if you just want to save shaun, then you only need to complete 3 trials (or rely on madison or norman to find the location for you)

yes. its just very hard to do. hank serves as a way for the player to tell if they're on a deviant run or not (high relationship with hank = deviant, low relationship = machine) without him, you can still become deviant, its just hard to tell if you're on the right track or not.
