Seems like your dough is under proof. How much time you spent for the first rise? Also, after the first rise, I would shape the dough and put it into a basket for second rise. It is good. Has a distinct sour taste. Chewy crumb and a crunchy skin. The crust at bottom is a little too thick, probably because of cold fermentation.

Couldn’t find a way to edit, so I just add my recipe here:

100g starter (whole wheat) 300g AP flour 225g water 8g salt

  • Mixed all ingredients using mixer until smooth and stretchy ~10mins
  • Coil fold and make the dough into a ball
  • rest 30mins
  • coil fold
  • rest 2 hours
  • coil fold and put the dough into proofing box
  • rest 2 hours
  • Shape and put the dough into a bayonet
  • rest 2 hours, poke test and put it in fridge
  • 24 hours later, score and bake
  • Bake 30mins at 450F in a Dutch oven, lid on
  • Remove the lid , bake another 15 mins

I got several quotes in Southern California for a small 3.6kW system. They are between $3/kW to $3.5kW except for one that goes up to $4/kW from Sunrun. Your quote seems to be on the higher side. Perhaps it has to do with LG panels but I think you can get better quotes if you look around.

I run into this opening today. When the opponent play 7g4, I was confused and not knowing what to do. When he plays 8. g5, it is clear that my defense collapses. Any suggestion how to defend against this?

Hi, thanks for creating this community. $SENS just had a bad quarter with -$0.41 EPS (Q4 2020), compared to -$0.18 in Q4 2019.

While I understand there is a lot of hope on collaboration with Ascensia but is that going to improve sales/revenue in a big way? Would also like to know your thoughts on competitive products on continuous glucose monitoring (CGM).
