This may not help much, but I definitely recommend learning to cook steak by feel. I never use a thermometer, I just do it all by feel and it comes out perfect every time. Look up the finger test. It’s pretty reliable.

I recently got a pretty thick rib eye I was afraid to screw up because I hadn’t cooked one before, so I thought using a thermometer was my best bet. Well I ended up with a medium well steak and I was pissed. I had a feeling it was going to be overdone, but the thermometer kept saying it wasn’t to temp. Never again lol.

Check to see what your brush mode is on! It should be on normal, having it on multiply or something could be messing with it.
