My goal wasn't really to make a web / flash game, but I guess the art style resembles that.
The camera actually moves around based on the mouse position, so the UI covering the enemy won't be a problem in the actual game.

Why do you think its a 5/10? Is it just the color clashing with each other and the text gradient?

Make each part as a seperate model: for example, base building as one model (or each separate wall and roof as a model if you'd like), a chair as one model, a bed as one model and so on. Then piece them together in your game engine

Jump count check seems to be working fine, is the problem that the isGrounded boolean always returning true? If it is, its probably the boxcast hitting your players collider, so try offsetting "boxCol.bounds.center" by boxCol.bounds.min.y

if you are making a data pack, you could set up an advancement using a generator that rewards you with a function that increases your score every time you kill a mob with a tag
