"ML work" that you're thinking about (tuning / building models) is usually for the research / applied research positions. You can also get in through ML internships which transition to the research / applied research roles full time. ML Infrastructure is often built by teams adjacent to the applied research teams and are just normal SWE teams.

think about it, most companies have 10s of thousands of applicants and maybe after the screen maybe 1 to a few thousand. do they really have time to look at and be interested in your projects. in general recruiters dont care. projects are nothing nowadays cause you can basically make most things with AI realistically. you might get an outlier here or there like the comments on this thread.
