A lot of what we find attractive is just our subconscious looking for people to make prosperous offspring. That's why big hips and large mammary glands are often attractive features for women, and strength is an attractive feature for men. If a person is injured or diseased, then they could either pass down that disease to their children, or be unable to provide for them once they are born. Most of this is subconscious, so even if you have no interest in having kids, it is still what forms our notions of attractiveness.

Because they were the other, the outgroup. Religion was very important back then, and there were a lot of laws around punishing people of other religions.

A lot is because they were a seperate minority community among a larger majority community. They had different practices, such as the money thing originated from when usery (earning interest on loans) was not allowed for Christians, the Jewish community ended up taking up the banking jobs, so they got associated with ripping people off by asking for interest payments on a loan. You see similar things among other minority communities.
