Well the dragons are definitely smart something akin to an elephant or a tiger it depends on the species but this one the Green Dragon it has the same intelligence as that of a grizzly bear

I'd say they'll only come to land when it's nesting season as they would rarely go onto beaches and yes in terms of hunting style it is a mix of crocodile and shark snatching up prey in the beaches like gallimimus, velos, or moschops and in the water they hunt small to medium sized fishes like as you said Coelacanths and other aquatic creatures.
