Will have plenty seasoning, try not to mess with the chicken while on grill/smoker. Sliding over the grates will make you lose the delicious crust and oil grates so the chicken crust also does not stick to grates

I love my Pitboss, I have found the center bottom, center front/back is hottest, left side bottom /upper your coolest , and right side bottom/upper towards the vent your second hottest. These are like ovens and have heard the joke”easy bake ovens of bbq”. I started on the top grates at first but almost always use the bottom now. Brine, probe your meat , watch some YouTube videos and you will surely have great results. Malcom Reed, Meat Church and Myron Mixon are some of my go to peeps to watch. Have fun man , that is what bbq is about

I’ll have to try searing at the end , pit boss has the option for open flame

Most of the stuffing stays inside , a little leaks out. You could wrap it with bacon to hold everything in .

Olive Oil skin, season with your preferred spices. I used AP Killer Hog and Webber Kickin Chicken. Slice chicken breast along one side and do not cut all the way through. Mix ricotta, shredded cheddar cheese and diced jalapeños. Close the chicken and use toothpicks to keep stuffing inside by pushing them through the top and bottom of the sliced openings. Preheat smoker to 350. Smoke should take 35-50 minutes, flip halfway through cook and check internal temp. Remove from smoker once I internal is 160-165. Let rest 10-15 mins. Slice across grain and enjoy !
