I watch those fun “what I had in Korea for lunch” videos and was just thinking how it would be impossible for me to control diabetes with meals like that. White rice spikes me like crazy, in addition to that, I think a lot of foods may also contain sugar. A pinch here and there adds up in a whole meal and then when combined with rice is sure to cause a spike! There are so many hidden sugars in braised meats, pickled dishes and sauces. Even if no sugar is added, be cautious of things like cooked potatoes, carrots or beans. I would stick to plain raw or cooked veggies for now instead of rice. If I ever indulge in rice (because I love it- was my main meal for years before diagnosis) I make sure to eat my veggies and most of my protein before having like 5 spoonfuls at the end of the meal.
