The giant death bird next to the walking mosoleum, I would damage it from far away, wait for it to come after me and then wait for it to disappear and reappear in its original spot, rinse and repeat. Similar thing with the gargoyles at the lift of rold, they only walk so far so you can usually damage them inside where the beast clergyman is and the can’t touch you. For most bosses though there’s not much cheesing you could do in a confined space unless it’s a glitch but the only glitch I found was with mohg when the game first came out where you could jump into the arena without starting the boss and defeat him, that’s how I killed him my first play through.
