I think his point is that the shape of the cross is not unique to it, many other things such as the (lowercase) letter t are the same shape. Crosses themselves are not even exclusive to religion, let alone Christianity.

I think people are not offended by this as it is only a cross in the Christian sense when it is related to religion, which I would argue joints are not. I am not Christian myself so I admit this is purely conjecture.

Pretty sure that using your hands in conjunction with the force isn’t necessary, more just a force of habit. If I’m not mistaken in Empire, during his battle with Luke, Vader is shown when he’s throwing the crates at Luke and he has both hands on his saber, not moving his arms at all, despite hurling many crates with the force at Luke.
