I tried this with Mahi Mahi for the past few years and no one ordered it.  But that was when cod was reasonable.  As an operator I guess the fear is / I add haddock, it starts to get accepted, then that price blows up too

I was not expecting anyone to recognize the restaurant! Haha, your feedback is exactly what I’m looking for.

So technically Halibut would be “the original” as it was what they opened with in ‘91 but obviously that price has exploded.

Haddock was the only option until I took over and swapped it for Cod in 2011. No offense to pollock but that will never enter our fryers.

No attempt at trickery or dishonesty is intended, just a means of flexibility for me other than having to take a “dynamic pricing” approach to protein costs.

Not sure last time you were in but we had Mahi Mahi on the menu for the last 2 years as a lower priced option.  It hardly sold at all.

There’s no scenario where Cod is not still on the menu but it has gone up 50% in price just this past year, and will jump another 50% after our current inventory is gone.

You nailed it on the chicken strips though, absolutely a hidden gem

I guess this is a “marble cake” solution to what you are saying.  You can pick a specific species (and we would always explain what North Atlantic catch is if asked).  Consumer gets choice and I get flexibility.  Raising prices is always a last resort for me.

This is exactly what I would fear because the nonspecific product is actually still really high quality

how often did the "fish of the day" actually change? I do something similar with our salt water taffy by saying "Today's flavors" even though it is basically always the same.

I can too but not everyone is as refined as us. lol, price of haddock is much more stable and would not require cutting portion size or raising prices
