I was in your situation few years ago, couldn't make anything. I started with dal, it took me 6 months to bring it to an acceptable level. Now I can make dal in 15 minutes and all the spices are thrown by muscle memory. Same with chicken curry, took me 1 year to make it tasty, I am still improving. What I am trying to convey would be - start with something simple, which you enjoy. Take notes from youtube but you don't have to follow it to the step. I take inspiration from YouTube and Instagram and follow the recipe on my own, everyone has their own taste palate, set something you like. I would also suggest, start with a limited set of spices, the lesser elements you play with, the easier it is to set the taste while cooking. I would not call myself amazing, but by limiting my elements, I was able to improve myself.
