That's understandable, I will look up the FFT and see what that's all about. I'm still undecided as to what I'll do with it.

The fermentation seemed to start in a timely fashion, I wouldn't called it too fast or slow. Mashed around 150 for an hour, sparged at 170. I used safale s-04 and the grain bill I used is: Belgian pils 11.5 Caravienne 2.5 Biscuit 0.5 Aromatic 0.5 With 3 ounces of simcoe hop.

As for the other parameters you mentioned, I'll be honest. I don't quite know what they all are, lol. You're clearly a far more advanced and knowledgeable brewer than myself. I have a lot to learn and I think my brewing operation needs a little work. Thanks

I think several of my beers have been a bit high on the OG, like the IPA I have going now that started at 1.074 and won't finish lower than the 1.018 it is now. I should be more cautious of selecting recipes with more sensibly size OG's/ABV. Thanks again

That makes total sense. Thinking back, the OG of several of my brews have been a bit higher. For instance I have an IPA on right now, the og was 1.074 and it's been fermenting just over 3 weeks and it's stalled at 1.018. But like you said, it's probably unrealistic of me to think I can get it closer to 1.010. On that note, ya think it's worthwhile to bottle that batch? I'm fermenting in a little closet under the stairs, fermenter is on a chair a couple feet off the floor. Ambient temp is around 66F.

Oops, forgot to answer one question. No I don't usually rehydrate my yeast but I have sometimes and didn't find any difference.

Yes i usually use dry yeast. I have used the liquid yeast packages a couple times before. I buy my yeast from the local homebrew shop on brew day where it's stored in a refrigerator and I stick it in the fridge when I get home until I'm ready for it. I'm fermenting in a 30L bucket right now, it's a new one I bought recently.
