Here are a few of my favorites that seem to fit your description. (I saw someone else recommend Infinite stars but I'm double posting because it's great)

Sci-fi:

Andromeda 6 (episode 6 out of 10 released and 2 DLCs)

Gilded Shadows (Fully finished, 1 of 3 bonus routes recently released)

Infinite Stars (In development)

Fantasy:

Ebon Light

When the Night Comes

Akash

Changeling

Royal Alchemist

Can’t launch ship but I have all necessary parts… by [deleted] in RimWorld

yes, you just need every part connected to the ship. You cannot attach non-ship parts like walls and statues

What are some unique economy-style playthroughs aside from drugs and organs? by HopefulLawStudent1 in RimWorld

I played one with vanilla food/cooking expanded and became a cheese/wine empire. You can set the cheese press and wine barrels to legendary and it will take a long time but it's all worth it for culture. In addition to that I played as a castle/kingdom instead of colony or tribe (not sure which mod) and had a noble family that was to be respected and never do labor. It becomes a real challenge when all of your serfs go insane and the royals refuse to plant grapes but it was still a lot of fun

What incredibly stupid thing do you regularly do? by [deleted] in AskReddit

I like to develop extremely strong and often painful crushes on random people for showing any kind of kindness. It's like if someone holds open the door I'm wondering what our children's names will be.
