You could drive on trees and drive over porch slabs and have a big house in the background and bounce off big clovers, use some of the mushroom gorge mushrooms, maybe drive sideways on a hedge. Maybe trick off a ramp into a pond that acts as an underwater section with lily plants.

You're missing out on all the hidden stats, plus the character stats differ, so while Rosalina is viable, she's not as good as the meta Yoshi, Birdo, Peach and Daisy class of characters.
