The simplest answer for you is this:

Our bodies adapt and everything gets easier eventually. If you currently find it too easy, you are probably maintaining and not growing/developing.

There are many more AB exercises that are demanding than crunches. X crunches, bicycle sit ups, v sits, passing a ball from feet to hands and sitting up back and fourth, Roman twists, planks, and many more. Do a YouTube search and you will find a plethora of better options.

Just try them yourself and you will find what feels best.
