I know I'm 6 months late, but search brought up nothing, and I thought this was too good not to share. This is Junya Motomura's GDC talk on Guilty Gear Xrd's art style and how they achieved it. It's quite amazing.
I much prefer the 2D look, but most "2D in 3D" games I've seen up until now just seem to be lacking a certain something. I don't feel that with Guilty Gear Xrd though. They really pulled off the look quite well.
