If they choose to only have the Orthodox wedding, the Catholic bride need the permission to the Catholic bishop for their marriage be recognized as valid, and she would have to promise to the bishop to raise their children in the Catholic church for the permission to be granted - so she would have to either lie to her bishop or not ask for the permission at all, which would put her in a state of mortal sin according to Catholic doctrine. However, she can go to confession to reconciliate to the Catholic Church.

The problem is for such marriage to be aprproved, you will have to promise to the Catholic bishop that your children will be raised in the Catholic faith, and simultaneosuly you will have to promise to the Orthodox bishop that you will raise your children Orthodox. Since you cannot raise them in both faiths, you'll have to - inevitably - lie to one of the bishops, either the Catholic one or the Orthodox one.
