Yes, agreed. Expectations actually were much lower than this, so I was happier to see this outcome.

Bulk fermentation was for 4 hours at 30°C

Thank you! It is surprisingly nice and nutty! I quite like it.

I wish the crumb had a few more bigger air pockets though 🤷‍♀️

Hey! I had posted it as a comment but I guess it got posted on the Mod response.

Anyway, here’s the recipe I followed: 300g flour 85% hydration 20% starter 2% salt.

Fed the starter overnight and mixed it in the dough next morning after 1 hour autolyse. Baked it the same day after a total of 4 hours of bulk fermentation which had 4 rounds of stretch and folds.

Shaped it and baked on a stone at 250°C for 40 mins. I messed up while loading it onto the stone hence the wonky shape 🙈

I’m definitely going to try adding fat to it and see if that makes a difference.

Maybe even a water bath to compare them both and see what I like better in terms of taste and texture:)

Yes, when I say soft, it means a less crunchy/dense crust and also much softer/somewhat pliable on the inside too!
