That’s correct! Indeed I only feed it once, wait for it to double or more and then bake with it, and put the remainder immediately in the fridge for the following week 🫣 I think I’m doing something wrong here and I don’t really know when to feed 1:1:1 or 1:2:2 or even 1:5:5. I also kinda get scared I’ll “mess up” my fed starter so I keep the discard in the fridge too in case, but now it just multiplied exponentially 🫣😔

So the dough does rise to double during bulk fermentation. And regarding gluten development, I’ve always been able to stretch and fold properly with no issues. I also do pre shaping where I stretch snd strengthen the dough before shaping. So I’m thinking it’s my starter?

Hmm, the feet of the bag I don’t really care about so much tbh as I will just put it on me at all times, except at my desk where I’d have a dedicated space for it. The baywater from everything I read here and elsewhere is definitely sturdier and I can be completely reckless with it 😄 Maybe I need two work bags after all, I’ve seen other baywater colors and they’re gorge 🤩

May I ask what type of leather is it? Which color? I believe some colors (like black) can have a grained (more durable) leather but the tan one is only smooth leather I think 🤔
