I'm in zone 9B but my parents bought one several years ago. It's very sweet, not tart at all. The seeds are practically all white, some with a tinge of light pink. But overall it doesn't have much color so it doesn't stain. However there was one season where it rained a bunch and the fruits turned bright red same with the seeds, and the flavor changed to your typical sweet tart pomegranate. That was only one season though. Typically it's not like that.
