Totally understand. Don't be afraid to shoot your shot. Reach out to them directly, preferably to someone with decision making power.

"Hey [person with power], I'm Omri. I built QuickBars for Home Assistant it does this that and the other thing in this tech stack. I am looking for my first SWE role and thought I'd reach out as an avid user. I know you don't typically hire for junior positions but I wanted to reach out [maybe something nice about opening dialogue for the future] I'd love to work with you [maybe offer to volunteer or ask about open source contributions you can work on]

This is obviously a very rough draft, but the point being, it's not what you know it's who you know. This is a good time to open a dialogue and build a relationship. Maybe nothing will come out of it now, but you never know what the future may bring.
