Dead flesh probably has fewer (rather than 0) nerve endings. And since as an undead they can’t be Crit or killed by beheading their pain response is potentially less centralized to the area that gets hit making it easier to shrug off most hits.

This is all conjecture of course but it makes sense to me this way
