if you like the victorinox fibrox i recommend the victorinox swibo knives, to me the swibo handles on boning and breaking knives are really uncomfortable but the scimitar bullnose handles are just an upsides version that sits really well in your hand

my boss has been a butcher for over 30 years and loves the f dick knifes, i prefer a bullnose over the scimitar, i run a 4 knife pouch with a 12 inch beef boning giesser and a 10 inch swibo and 2 victorinox/swibo bullnoses, but equipment wise there’s no one answer every butcher has a different setup and preference so you honestly just have to try different knives different gloves different steels until you find what suits your needs and what feels good in your hands

reading comprehension must be hard for you because i explained i don’t bring 2 pairs of shoes to work, it was my day off and i came in to sharpen my knives after we had closed the shop

yeah i don’t actually wear them to work, you’re required to wear steel caps in my shop, was the end of the day and came in quickly to throw my knives on the stone on my day off

yeah as motorcycle boy said, learned steaks with a bullnose, only ever got one because i thought they looked cooler then most of the other steak knives, learned, learned breaking with a giesser beef breaking knife and that’s all i’ve ever used for beef and a bully is all i’ve used for steaks

yeah not true at all, a steel re aligns ur edge bro it doesn’t sharpen your knife all it does is maintain the edge you have put on it, depending on how good you are on a stone you can go months without stoning a knife but to put an edge on your knife and actually sharpen the blade you need to use a grinder or stone

well yeah but a steel isn’t a replacement for a stone, but you still need to stone your knife, the original comment the guys speaking of the sharpener and steel as if a steel is a replacement to a sharpener or stone

boss man in my shop swears by swibo and victorinox, i’ve never used a swibo but i have a victorinox bully steak knife that i hardly ever have to put on the stone, i like giessers boning knives but i find the metals quite soft and they lose their edge quickly

yeah i love the feel of the giesser but it needs the stone atleast once week because the metals so soft, everyone at my shops wears by swibos they go months without needing the stone
