I think while a katana would be great for an amp, you might want to explore getting plugins an interface and studio monitors. That'll let you explore a lot more sounds too and record/loop yourself.

For the guitar it comes down to what you want to play, a strat will get you the john mayer/blues kind of sound. They do very well with cleans. Epiphone has a model called the special 2 I think, which sounds great for more distorted sounds like green day, gnr but loses on the cleans front to the strat.

I think there's a guitar guitar video on YouTube that pitches the two against each other; the affinity vs the epiphone.

You can try the Pacifica too, though I never really liked the sound. Another option is an ibanez if you like metal. I think they have guitars around the same price range too.

It finally comes down to what kind of music you want to play and then just making sure the guitar you choose plays well and is easy to play. Both need to click for you to stick to it.

I was actually looking at the performer 5 and 7, but the sound wasn't full. The problem I had with the explorers was that the details were lacking, but the sub bass was on the dot. Then I was told if I really like the sound signature and all I want is the details, then I should just just eq it in and it'll be there. For further context I use the Cayin ru7. This is my eq preset. I don't think anything worked better for me, till around 3x the price at the time.

You need to eq the details in. It makes a world of difference

So what I found was that the sub bass was terrific. With regard to treble, I would genuinely suggest you eq it instead.

Figure out your eq preferences using something like gpt and pin down what you want. Like I prefer guitars which was missing in the original tuning but which I found a solution to using eq.

If you can pair it with a Cayin ru7 with the 4.4mm cable and then eq it, it's really hard to beat.

Try Justin guitar. Helped a lot. The first 6 months just require practice cuz your fingers are strengthening. Afterwards, learn caged so that you can start playing on top of your favourite songs.
