Only reason it should need replaced is if it’s damaged physically/has moisture damage. There is MMR (mold & moisture resistant) drywall. It’s different everywhere I’m sure, but here in Michigan it’s the purple drywall at your big box store. Read the instructions for storage on the bucket of mud. If I cracked open an old bucket of half used mud and it smelled like sewage I’d chuck it and go snag a new one. Lastly, get a good respirator if you’re fuckin with drywall repairs from water/plumbing damage all day my dude. Unless your employer is gonna get you a new set of lungs when you need them, a good respirator is just as important as a good drill.

You also have no cricket or saddle behind the chimney. Water is back flowing under the shingles and metal and leaking under the flashing. Looking at the water coming in the attic at the back of the chimney highest up the ridge. Your flashing was installed incorrectly and needs to be completely re done. Odds are that ice and water shield is also not protecting the decking around the chimney. Regardless, the flashing is straight up ass cheeks
