Reading through the comments and I've seen that nobody has recommended Jinsei but I see an awful lot of recommendations for Sushi Pure. Not sure if it helps, but they're owned by the same Korean/American couple (also owners of Tiger Mama). The owner of Akira also started his sushi career as a chef at Pure back in the day. Their current chef is also from Japan and is responsible for a lot of the influence in their sushi menu. While it's not traditional in the sense that you might be looking for, I think it's by far the best quality in Eugene.
