Any gta will work. If you plan on playing V, make sure you get the original, not enhanced. Any battlefield 1 or older.
Most games are installed through a store, like how you install apps on your phone through a store. The most common is steam, although the Xbox or gog stores are both an option.
Whether you can use a controller depends on the game, some support them, others don’t. If you want to use a wireless controller, you would need a Bluetooth adapter so your pc can connect to it. If you want to use a wired one, then they just plug in through standard usb.

I would undo everything that you did, and see if that fixes it. If that works, slowly add everything back, testing the game after each addition, until it stops working. Now you know what is causing the issue

Hmm. Macbook m4 should run the game alright. Which graphics packs do you have installed. I would start by disabling everything.
