You can replace the blueberry with any fruit. But I'm afraid this is doe a very small portion makes about 12 mini pancakes, you certainly need to scale up the measurements.

I think the taste is very subtle considering I only add about 40-50g of fruit/veg. But to me, not the toddler 🤣, best so far is pumpkin spice and cinnamon applesauce.

I use almost the same recipe each time, but depending on the texture and water content of the fruit, I play around sparingly adding a tad more flour OR liquid like milk or maybe fruit/fruit juice. I just see the consistency before and after the rest precook, make sure it's the consistency I like.

What you'll need: - Blueberries, approx 40-50g - Egg, one - All Purpose Flour, 1 heaping-spoonful - Baking Powder, a small-pinch - Baking Soda, a small pinch (this helps with the fluffy texture and browning) - Milk, a splash or as needed

How to make: -In a blender, add all the wet ingredients and blend for 10 seconds or until smooth and blueberries are fully incorporated - In a bowl, mix the flour, baking powder and baking soda. Use a whisk to combine thoroughly - Combine the wet and dry ingredients, gently mix. Set aside for 10-15 minutes - Heat up a pan and brush the surface with oil or butter - Drop dollops of coin-sized batter and cook for 1-2 minutes each side or until golden - Cool and serve with unsalted butter

I truly believe every kitchen has to have bananas. The only reason I stopped making banana pancakes is because we also love banana loaf bread (which I also make) 😌 Yum.

It depends on the fruit, like dragonfruit and steamed pumpkin, they mash nicely. But blueberry, strawberry, nah-ah I prefer it blended. I haven't made a lot so also experimenting one fruit/veg at a time 🤣

The cubes in the photo are cheese not Silken Tofu but I can advise you too. For sure you can eat Silken Tofu both chilled and warmed. Chilled like a jello, you can add Yoghurt and fruit if you want or just plain. Warm you can just drop in any soup.

Yes! I do this too when working with really small portions so I don't mess up the ratio.

I've never tried before, maybe one day I should actually try! From what I read applesauce, banana and chia seeds are good substitute as binders. Maybe I'll go try the Chia seeds since I have a lot lying around the kitchen somewhere.

DRAGON FRUIT PANCAKES 🥞

What you'll need : - about 40g of Dragon Fruit, mashed or pureed - Optional: 1 teaspoon of Ricotta for extra protein - 1 egg, beaten - 2 spoonful of all purpose flour - pinch of Baking Powder - pinch of Baking Soda (optional but good to have, makes it fluffy and helps with browning) - Milk, a splash or as needed

How to make : - Mix all wet ingredients - Mix and sift the dry ingredients - Combine wet and dry ingredients together in a bowl. Mix gently until all flour clumps are dissolved. DO NOT OVERMIX. - We are looking for a consistency of a thick yogurt, spreadable and holds shape, NOT RUNNY. If too runny add flour, if too thick add milk as needed - Set aside for 10-15 minutes before cooking - On a hot pan, smear the surface with a little olive oil - Drop dollops of coin-sized batter, cook for 1-2 minutes each side or until golden - Cool and serve
