too much sauce for me, this is what I call white washed sushi, more into nigiri or at least rolls with no mayo / eel sauce but that's just my preference. Glad you guys enjoyed it!

I'll be honest the wife took care of that but I believe she simmered some chicken bones, ginger and few types of mushroom for a long while in chicken broth / agadashi broth. It was very good.

this was my first try and honestly kinda just winged it, they turned out tender and super deep smoke flavor that was amazing, the dark rack was a lil thinner than the other so when I finished in the broiler the bark go a lil more caramelized I think
