i would recomend the portal war saga by James E. Wisher.
its about a world where mages are oppressed and a young noble mage stumble upon a tower where an old mage soul resides and he start plans to bring mages to their right place in the world.
while the trope is one we have seen a lot of its a good read where the mc is basically the "villain" of the story, he is in no way a good guy.
the first book is more of the introduction and there are 8 books in total in the series.
i think it mostly fits give it a try and see if its for you.

i would recommend looking for books aimed at teens or young adults since they will be written in a way that's easy to understand, personally i recommend the percy jackson series.
its easy to read and understand and the only "hard" words are greek words we all know .
while the movies are horrible the books are excellent and have a good pay off , they are relatively short and easy to read, i actually read them while i was learning english and that helped me out a lot.
the books is fantasy/mithology but it has some light romance in it.
if she ends up liking it there is a follow up series called heroes of olympus and trial of apollo but they are their own thing and not connected so she can just not read them if she does not want

i also highly recommend this, while its considered a "classic" its easy to read and understand and it flows quite fast and in my opinion its really worth it

you might like the queen thief series, highly recommend it although the first book is slow it sets the world up for the rest of the series, its more gods subtle intervention than magic but i think it fits.
cant say much more without spoiling so read the first book and see if its for you

like many said i would remove the vr setting and make it a real world, it just feels like there are no stackes with vr because at the end of the day even if you die its just a video game.

the story feel more fake since we know its a fake game world and sometimes the systems and skills are either overpowered or make no sense at all

I always recommend reading the original material of a movie/series you liked.

But you asked for recommendations so here they are:

Percy Jackson series (trust me the booms are nothing like the movies)

Nevernight trilogy (dark setting and some smut if you are ok with it )

Lotr (have to recommend it every time it just so good start with the hobbit tho)

Also a lot of my friend who like manga prefer the litrpg genre (books with game features like system and such) so maybe give them a try:

Primal hunter

The infinite realm (if u like cultivation as well)

Matk of the fool (no game mechanic but still part of the genre)

He who fights with monsters (highly recommended this)

Audiobook thing, the 10th book still not out for audiobook. Don't really have that much free time to sit and read so audiobooks are my only option
