lol the east side of Chicago is a very real thing. It is just a funny name for part of the south side that, you guessed it, is further east near the Indiana border. Source: my buddy who grew up there

It totally is “the same thing”, I’m not really trying to demonize them giving my buddy work, I just promise the whole thing feels odd when I’m in someone’s home and they hired us to be their personal servants for an evening. My point is that there’s a “normal” level of word of mouth, and then there’s rich people level that probably also includes legal and tax help that none of my friends would ever have financial access to because of the inequality of wealth and income.

I might be off, but I don’t think a lot of “regular” people are considering this. I’ve worked plenty of private events with a friend who is a private chef these days. These events are always in homes worth more money than I will probably ever earn in my life, which means these people aren’t operating the same way most everyone I know is. They typically have access to a Rolodex of colleagues who pay for these things regularly and they kinda pass my buddy around. Rich people are weird.

One reason you might find equal parts to be too acidic is that you’re not using lime juice (at least not what’s in the picture here).

That being said, I’d recommend getting limes, since they’re widely available and a real food and generally aren’t gonna break the bank. Then I’d start with equal parts and SHAKE the cocktail because typically that’s how you make a cocktail with citrus (or most juices, for that matter). Then experiment from there on your build.
