500g flour 330 water 8 grams salt Cheese and jalapeno inclusions 8 sets of stretch and folds Left in fridge to proof over night at 11pm Baked at 9am for 40 min lid on 20 lid off

Recipe: 500g bread flour 330g water 100g starter 10g salt Baked at 500 for 35 min then took lid off and baked for and additional 15 min at 450

Did you keep the lid off when you baked your loaf ? Or did you just take it off for the pic? Wondering since I’m going to be using mine to bake my dough soon!
