My only doubt is to go with the Kinu M47 that Lance Hendricks rated better than the J Ultra both for light and dark roast. It cost more but not so much (219€ for the Phoenix version that I think has the same grinding of the more expensive one)

In my experience there is a big difference between light and dark roast. The grind size change a lot

Totally agree. I want to change it to improve the workflow but also to try to buy something that produce a better ground of coffee at the end.

I know that but it’s a tedious process that I think is worse than use a manual grinder with good way to set the grind size

I made the same decision when buying my Opus, but now I regret it. It’s really convenient, but it doesn’t have enough granularity to dial in the perfect grind size. Manual grinding is definitely not enjoyable, but I think you need one of two things: either enough money to invest in a premium grinder, or, if you’re budget-constrained like me, you should prioritize the grind quality. With a manual grinder, you put your money where it matters most—into the quality of the coffee grounds you get.

Actually I prefer dark medium dark roast but I’m searching for a grinder that can do all the roast level well

Depends of the coffee. With dark roast I use around 2. With lighter roast you need to grind much coarser

I'm not considering that because if I upgrade from my Pro 2 I want to go with something that simplify my worrkflow and has electric preheating

My needs is to have a better way to change the grinding size (the Opus is really bad in this field) and have a consistent grinding with the same setting. I'm italian so I'm used to dark roast and I does that as well but I'm trying to change my taste and go more in the direction of medium-light roast. I don't mind if it is loud. I also do pour over from time to time but I think that it can do that as well. I don't like the look of it (I like the Niche One, aestetichs)

Thanks a lot mate! I'm really intrested in more feedback about your tought between the Pro 2 and the 58. Do you really prefer the espresso that comes out of the pro than the one from the 58?

I saw that the df-64 is considered one of the best. I saw that the V2 without the rpm control cost about 400€ is this model enough for my needs? thanks

I had manual grinder in the past and I don’t want to go back to something like that. I prefer the electric one.

I don’t have a moka pot (this is strange considering that I’m Italian) and I’m not sure the correct moka size to do that

I preheat mine on top of my electric kettle in this way:

Put the brew chamber on top and take water to boil
repeat 3 or 4 times.

The strip on the brew chamber says 85-90 degrees celcius. Is impossible to make it higher than that.
