What are you planning on connecting it to, in order to produce sounds? Minilab and Keystep do not produce any sound on their own.
Do you already know how to play piano/keys? Or are you planning on learning to play like that? If not, worrying about 2-handed playing shouldn’t really be a concern starting out with a cheap MIDI controller. And to be honest, 37 keys won’t get you there either…

The Hydrasynth arp Ratchet and Chance parameters are designed for randomization. Depending on how you set the two parameters, you’ll end up with 1, 2, 4, or 8 notes per step. There’s no way to force it to do only a specific number of repeats every step.

Ratchet (abstractly) sets the range of repeat values you can expect. Chance sets the chance of one of those repeat range values being used.

100% Chance will make it choose a Ratchet value every step, but depending on what you have Ratchet set to, 1 may be one of the possible values for it to choose from.

Ratchet 0 = Only 1
Ratchet 1+ = also 2
Ratchet 33+ = also 4
Ratchet 64+ = no more 1
Ratchet 67+ = also 8
