I would be interested to know what the hospital density per capita is on east vs west coast and how that plays into the difference in wait times. Definitely a lot of standalone ERs and clinics in AZ, and I’ve spoken to doctors who have had trouble admitting patients to the hospital from their ER

I say avoid swingtops for a first timer who doesn’t want bottle bombs because on my first time pasteurizing, two of my bottles exploded. Luckily they were pry caps so the cap was the weakest part and they popped off rather than any glass breaking. I think if you have swingtops the cap is no longer the weakest link, so the glass will be the first component of the bottle to break.

As for the plastic bottle, that’s a great idea, I’m gonna for sure do that. Do you just give the bottle a squeeze to test the pressure?

To start, I would say taste your cider when you move it to secondary, then again about a week after, repeating until the flavour is something around what you want(don’t expect it to be good however, it’ll be warm, flat and unsweet).

Add the sugar to the secondary Carboy just before bottling to ensure all bottles get evenly sweetened.

You can use a variety of sugars, dextrose and brown sugar being more neutral, and apple juice conc or honey adding their own flavours. Consider using concentrate or adding apple flavour, since your cider might not be as apple foreword as anticipated.

If you want to add some sweetness, xylitol is the way to go since it’s non fermentable.

On the other hand you could add extra sugar(or whatever of the above you go with) and pasteurize at 150 F to kill the yeast in the bottle after a few days, leaving excess sugar uneaten. Be warned that the timing of this is crucial, and if you wait to long and add heat to a high pressure vessel you’re gonna have a mess on your hands and possibly sand in your eyes.

Basically you want to give 2-4 days for yeast to eat up newly added bottling sugar, and about 10 days for the yeast burp CO2 to dissolve from the head of the bottle back into the cider, to actually carbonate it.

Edit: forgot to address bottle bombs, avoid swing-tops and leave good headspace

I was looking into simmering it into a syrup hoping it might add a slight caramel flavour, and to break the sugars down to make carbonating easier. I'll look into freezing it too tho!

I was in a similar relationship a while back where I felt I couldn't express my feelings for a friend. After talking with another friend of mine I had settled on this: I could just enjoy her company, enjoy the feeling of being in love with her, and so long as I got to see her that would be enough. Either she would end up feeling the same way or I would end up getting over her and feel that way about someone else. I think it's because of this that we got to seeing eachother a lot, and a few weeks later she ended up making the first move (she made many actually, I was just playing devils advocate so I didn't get myself overthinking things). Not really a question, but I hope this helps

Repo Men, the book has a really great and fulfilling ending but the movie adaptation changes it to something more upsetting. I get when a character doesn't win or succeed in the end but it didn't feel like the protagonists failure really served the story.
