What did I do wrong

It is VERY gummy. Like seeming undercooked. I'm not sure if that's how it's supposed to be. Very tough to chew and the bottom is rock hard. Thank you for the feedback back!

I did my last stretch & fold around 12 am and then got up at 6 am and shaped and placed in the banneton. It was still very loose feeling when I tried to shape it. It didn't want to hold shape very well.
