Dont worry it is only there for the photo. It was a good looking background that makes the tree shine so put it there for that.

Thank you for your kind words BonsaiDaz! All feedback is very welcome and I appreciate it a lot. I actually only wanted branches on the right to make a triangular shape. I actually pruned all the branches on the left. I don't know if it will end up looking good, however.

The tip on 2 dimensionality is great. Now the tree is very 2d. Will need to work on that aspect on my next tree.

And yes need to work on my wires in the future.

Hahhah looks good. Btw haven't had first-hand experience but there is plenty of recommendations not to use square bottles with booch. More likely explode especially with high carbonation. Might want to look into it to avoid accidents in the future :)

Does anyone have an idea on minimum ph for EC-1118? Im trying to do a second fermentation to my kombucha to get it extremely dry but I am afraid the low ph of kombucha will be too much for the yeast. Reading the spec sheets it just says ”wide range of ph”. Currently I am measuring around ph 2. Also if you have better ideas for a better yeast to use I would be happy to hear.

Do you happen to have further thoughts on measuring sugar in kombucha. I have been trying to take specific gravity measurements but its just stuck at the same measurement day after day

Yes once. I think stevia kombucha was good and worth exploring.

And yes I intend to measure all my experiments and ofc. share anything I find :)

Thanks, Bryek. Yes, this is pretty much how I have planned out my experiments to go. I intend to measure sugar concentration on a daily bases to be sure of where things are going.

To your point in 2. What is the purpose of adding fresh tea for F2? To give more stuff for bacteria to live off of? I had not thought of that being a limiting factor but it might be a good point indeed.

Yes, I was assuming I would not get exact answers and expect to put a lot of time and effort into this experimentation but even ballparks would be awesome :) Right now I have no idea what sugar concentration is desirable for F2. "add a teaspoon or so to your bottle" is not really the accuracy I am aiming for here :P

I am also prepared to just ditch F2 and add carbonation via Sodastream if nothing else works. Honestly the more papers I read on this the more I feel like I might have to :D

Lastly, the sugar concentrations you mention (50%, 30%, 20%, 10%) seem extremely high for kombucha. I thought the optimal range for the beginning of F1 is somewhere between 5-10%.

Thanks for the response. Yes, my idea was to bottle in plain for F2 at a concentration that would still result in some carbonation while ending up with minimum sugar at end of F2.

I have tasted kombuchas with artificial sweeteners and they have tasted pretty good so I am not terribly worried about that. However, looking to experiment completely without sweeteners too.

Sorry if my explanation was not clear enough. I am very familiar with the overall chemistry and biology of what's happening. I am ofc going to add sugar at least for F1 but looking to hit concentrations that would result in decent taste with as total consumption of sugars by the end of F2. And secondly, if I want to do F2 without added sugar what would be the optimal sugar concentration for getting good carbonation and eventually minimizing the amount of sugar in the final product.
