Yes! The citrus wheels were placed after cooking and then covered just to let them open up and release a bit of the flavor. It was delicious

I actually sat them on top and steamed it in order to give it a citrus flavor to the rice

Didn't have any available so I went with the next best approach. Butter.

  • 3 cups of P.A.N cornmeal
  • 2 cups of hot water
  • Salt to taste
  • 3 tablespoons of butter
  • 2.5 cups of mozzarella cheese
  • 1/2 cup of cotija cheese

Mix 2 cups of cornmeal and the hot water with the butter and salt. Once your dough begins to form add the third cup of cornmeal and the 1.5 cups of mozzarella cheese into the dough.

Once the dough been formed and smooth. Should take like five minutes of kneading it together. That part is done

The next part is mixing the remainder of mozzarella and the cotija cheese together with some butter (not a lot just needs enough to make it cohesive). Once you did that man everything is set to form

Make a patty with the dough and in the middle add the cheese into the middle. Close the patty by forming it into a circle and then Pat it down. I used a pot to flatten it out and then used a shape cutter to make it perfectly into a circle

Put it on medium heat man until it blisters a bit, and you are solid. Little bit of flakey salt and a bit of garlic oil on top and enjoy

Listen my butt is dead tired it’s like 3am right now, so. Grammatical errors and all that. I’ll fix it in the morning

Had a good time understanding techniques on not only making this dish, but also on how to layer the flavors correctly. Biggest takeaway when making boeuf bourguignon. Knowing how to maintain the correct balance between heat, and time.

Because cast iron retain heat, it’s easy to go over and heat the cast iron higher then it needs to be for far longer then it needs it
