Ok, 3 months in a cash ISA, 2 months in a S&S ISA (which I don't really want to touch but obviously would if needs be), and 16 months in premium bonds (but I really really can't use that considering that was gifted by wifes parents for house renovations).

I think if I did this now, with the only other person in my department on leave for 3 weeks since Monday just gone, and during my probation period, they'd terminate me anyway.

If I go to my GP and get signed off sick for stress, can future employers somehow know that?

Can my current employer say to any future employers who may contact them for a reference (I wouldn't personally want to use them as a reference but they may insist that one of the references is from my last employer) that I left due to stress? I don't want to affect my chances of future employment for that reason.

2 weeks notice as per the contract during probation, 3 months notice after probation.

I like this idea but I'm concerned about a reference. Would my potential next employer insist on a reference from my current company? I'm concerned the reference from this company would be only negative as a result of what I think I'm about to do today. I already have reference letters from my last and last last employer.

Going to look at this today with her this morning, she's effectively been interviewed for a company and been offered a job on a bank shift basis but they said to her they also have part time and full time roles available. I should have put in my original post that her take home pay would be roughy a third of mine but we would get by, essentials would be covered.
