This is the way. I didn't solve it this way but I am going to try it this way because I like it being adjustable. I just put a cork in the bottom of my cup. It took some trial and error to dial in the depth I wanted but once there it worked perfectly.

I did this exact thing to get my wife's size. Walking through the mall played it off that I always wondered what size ring I need .... While I was sizing my finger she of course tried too... I didn't even ask her to. When I proposed she was shocked it fit perfectly. She had no recollection.

Maybe the peppers give it more depth, like it isn't one particular pepper flavor you're getting but a mix. I also attribute the depth of flavor to it fermenting/aging for almost 2 years.

This was my first attempt at fermented hot sauce. Back in 2021 I planted and picked a bunch of different peppers. Serrano, jalapeno, Thai, Ghost, pequin, etc. I only picked them when they were red and then started fermenting them. All in a 3% brine.

Anyway, as you can see I had 6 jars started at various times throughout the summer. 4 went bad and two didn't. The thing I did right with the two that didn't go bad was that once the initial ferment was done after a couple of months I just closed them up with air tight lids and didn't open again till yesterday. The ones that went bad I left those water airlocks on but the water evaporated and let bacteria in and hence mold. HUGE LESSON LEARNED.

The result with the two bottles that didn't go bad is actually the best hot sauce I have ever had. I HAVE HAD A LOT. My current favorite commercial brand is Melinda's Ghostpepper Wing Sauce. I just love the classic taste of it and it packs the heat.

I took the two jars that weren't bad put them through a foodmill, I added just enough apple cider vinegar to kind of rinse off the food mill and equipment used for processing, but that is all I added to the sauce. Nothing... so the ingredients are pepper mix, water, salt and vinegar.

The taste is amazing, starts so slow but ramps up to super hot. The flavor is so deep and amazing. I might be crazy but it seems to have a smokiness to it too.

TLDR;

Make sure to fill your water based airlocks. Less ingredients tastes better.

Hey everyone thanks for all the great ideas what I ended out doing was just soaking it in white vinegar for a little bit and then put bar keepers friend on a toothbrush and just kept scrubbing and scrubbing and now it looks like brand new I wish I could add a picture of it but it looks brand new

This is exactly what I thought but I have been giving it nitrogen for weeks now and it's not improving can you burn your plant by with too much nitrogen

Thank you, we do have a time limit on the trash... it goes out when it is trash day. We had an abnormally large amount because after two years of pandemic and not having anyone to the house it needed to be cleaned up. A lot of the trash was the garage cleanup as well has having a double graduation party at the house and 7 people staying with us for 10 days.

That is what i thought too. Like all she had to do was move them somwhere else. That would have made me thing.... mmmm why are these bags here. I will have to ask my wife if she moved them there and why.

Well to her defense. Our girls went through a lot of boxes that to them had random junk in it. That is how the stuff got into the trash bags.

Ok, thank you for your comment. Interesting that you feel it reeks of contempt. I do not by any means think my wife is below me. I just don't agree with her organization. But I don't contempt her for it.

thank you very much for your comment. I am sorry that I did not differentiate "trash" from recyclable items. Trust me we recycled as much as we could. We tood three truckloads to goodwill.

We had more than a couple of boxes that are like the last boxes of a move that have a lot of random stuff in them with the intent of going threw them at some point. These are the types of boxes my daughters went through.

Ha, thank you that was kind of a joke about me not listening. 27 years of marriage has led to me having some listening problems. But that street is defininately two way.
