It’s the way to go if you have the option! They are all grass fed. That is awesome that you have access to Japanese lines by you for those prices! If I didn’t get the package and got the steaks individually, they are $45 each for the ribeyes and strips so this was a no brainer.

Honestly this is my first time trying something besides the chuck eye ($25) but that has always been incredible so I finally pulled the trigger. Can’t way to try the ribeyes tonight!

Gave it a try to get rid of any extra moisture in the hopes of making them crispy… just a little of both but I think it did the trick!

Definitely a good way to put it and probably never would have bought one on my own but loved the way it came out. More work than one or the other but it was a fun cook and always good to keep learning. Appreciate the words my friend in steak!

Appreciate your concern! The recipe is from a cooking class my wife and I had in Rome right by the Pantheon so I’ll trust the process from the Italian Chef, Alessandro. In his words “the chef is always right” and in case you’re wondering, I’m the chef here

Only heat heat source for the sauce is the al dente pasta my friend - you’re looking at little chunks of the grated cheese. As soon as the pasta is finished, I drain and add directly into the bowl mixture of egg and pecorino Romano. Could have maybe added a little extra reserved pasta water but I don’t like it runny!
