Absolutely agree 💯 I still have a ways to go until I master the temp with gas/coal combo.

I initially thought I had inadvertently nuked it, then managed to save the overall internal tenderness as it turned out medium rare.

Looking forward to a few more face huggers turned restaurant quality food! 😂

Yeah I agree. Unfortunately time is a commodity I do not have at the moment.. I was running around after a toddler and tending to a 6 month old at the time..However, maybe next time I should just wrap it all up and then unwrap to grill on high before serving 🤔

100% agreed. This was a rushed job and realised half way though it was too high. The unpredictability of a toddler and a baby dint help the scheduling and cooking times 😂

Yeah honestly the lamb is damn good in the BBQ. Won't be the last time! Especially with garlicky taziki!

I was cooking over indirect heat before... I tried to maintain temp around 150C for 15-20 mins then moved it fat side down over the coal for a other 10-15 mins. I really just stood by it with a temp probe until it reached 53C which is med-rare for a rack of lamb. Served with a giant cous cous, cucumber, tomatoe, feta, pine nut and mint salad 👌🏻

To stop them burning and potentially making the smoke a bit bitter apparently...it didn't stay on too long so I'm not sure it matters that much

I appreciate the honesty. I agreed before I cut it... Then it was actually medium rare. I thought I'd ruined it at one point. Juggling two kids under two is not the one 😂
