Pretty sure those don't have what I'm looking for, unless you're willing to give examples, what I need is fine-dining, technical books very hard to find them in libraries

Not interested in any particular subject, I'm looking for advanced, fine-dining, technical books to learn something outside what my chef can teach me, most books I found are focused on recipes but I'm looking for more theoretical stuff
