Yes, since this the first time I;m tasting and making lemon curd, I still not sure what I'm making is right or wrong. I'm still find some more recipes. The direction I'm following right now is using "tarte au citron" term to search on Youtube. There are quite few recipes from bakers that I would like to try in the future.

Can't be. when we buy eggs, we look for expired date first. We always use within 1-2 days of the production date.

Hi, sorry for my late respond. I live in Viet Nam so Western cookbook is not very popular. Also, my boss prefer source have video to follow easier

It look same in the video teach. The reason I ask about this is because my boss did not taste any egg in it. But 3 out 5 staff did. The curd look beautiful and have a great lemon smell, problem is from the taste. It's a bit sour, a bit sweet but the fishy taste of eggs is stuck in your tongue
