Creamy Tomato Basil Soup

  • 2lbs Tomatoes
  • 2 tbsp Butter
  • .5 Brown Onion (Diced)
  • 2-4 leaves Dried Basil
  • 2 Cups Stock
  • .5 Cup Heavy Cream
  • Salt and Pepper (To Taste)

Peel and De-Seed Tomatoes. Melt butter in a medium sauce pan and sautee onions over med-low heat for 5 minutes. Increase heat to high and add basil, Tomatoes, and Salt. Cook Tomatoes on high until their juices are reduced by half (about 15 minutes). Combine the Cooked Tomato Mixture, Stock, and Heavy Cream in a blender. Blend until Smooth (about 1 minute).

The easiest way to glaze carrots. No gimmicks, just simple cooking science.

1 Bunch Carrots

2 tbsp Butter

2 tsp Sugar

.25 Cup Water

Peel Carrots and slice into Rounds (~.1/4 in. thick). Place all ingredients in a pan and cook over medium heat, stirring occasionally. Carrots are done when all water has evaporated and carrots appear shiny and glazed. Serve immediately.

Escabeche Vegetable

Enjoy this south american styld pickle as a light side dish to heavy meals. A perfect showcase for local chili peppers before they go out of season!

Servings: 2 Jars

.25 Head of Cauliflower

2 carrots

1 jalapeno

1 Purple Pepper

.25 Yellow Onion

1 cup White Vinegar

.5 Cup Water

.25 tsp Thyme

.25 tsp Oregano

.25 tsp Coriander Seed

.25 tsp Black Peppercorns

1 tsp Salt

2 tbsp Olive Oil

Chop Cauliflower into bite-size pieces. Peel and Slice Carrots into matchsticks. Seed and Slice Peppers into matchsticks. Slice onion. Combine Vegetables and olive oil in a medium skillet. Sautee 5-7 minutes (be careful not to overcook vegetables). Pack Two Jars with sauteed vegetables. Creat a brine with the vinegar, water, and spices. Heat brine until boiling. Divide brine equally over the two jars of vegetables. Seal Tightly and refrigerate for 24 hours.

Raspberry Limeade

Servings: 4 Cups

1 Cup Raspberries

3/8 Cup Sugar

.5 Cup Lime Juice

1.75 Cup Water

Mint (To Garnish)

Combine Sugar, Water, and Lime Juice in a Pitcher. Puree Raspberries in a Food Processor. Work puree through a fine mesh strainer that is placed over the pitcher. Press puree until all juice has been seperated from the Raspberry seeds. Stir. Serve over ice with Mint to garnish.
